At the beginning of the 16th century, during the "Age of Discovery", the Portuguese sailed east from Europe, gradually blending the lifestyles and dietary habits of different regions, peoples, and cultures from Africa and Asia. By combining the best cooking techniques from various places, they greatly enriched existing dishes, creating Macanese cuisine, which is unique to Macau. Macanese cuisine is a culinary culture that has evolved over several centuries of integration, and it is also an important historical product of Portuguese maritime culture. The culinary skills of Macanese gastronomy were inscribed on the "Macau Intangible Cultural Heritage List" in 2012.
The author of this book, Isaura Jorge, was born into an old Macanese family in Macau and has been dedicated to promoting Macanese culinary culture. To preserve and promote Macanese culinary skills, the author has compiled the family recipes of her grandparents – the renowned Macanese collectors José Vicente Jorge and Matilde Pacheco Jorge – allowing Chinese and foreign readers to understand the cultural characteristics and lifestyle of the Macanese people through their culinary culture. This book is available in a Chinese edition and a bilingual Portuguese-English edition.
